Gluten-Free

How Gluten-Free are We?

Many of our items are vegan and gluten free. Just how much?

Here’s a quick summary about our Gluten-free production procedures. You  can find out more about our emphasis on vegan-friendly offerings here.

Ingredients:

Baking:

  • Bob’s Red Mill Gluten-free All Purpose Baking Flour. It contains garbanzo bean flour, potato starch, tapioca flour, white sorghum flour, and fava bean flour.
  • Bob’s Red Mill Old Fashioned Rolled Oats–gluten-free
  • Bob’s Red Mill Golden Flaxseed
  • Domino Confectioners Sugar
  • Wholesome Foods Organic Evaporated Cane Juice
  • Locally sourced Maple Syrup
  • Spectrum Organic Palm Shortening
  • Earth Balance Soy Free Vegan Margarine
  • Gordon Food Service Cocoa
  • Gordon Food Service Semi-sweet Chocolate Chips

Soups–All of our soups are made from scratch, so that we can be sure of the ingredients. We make a variety of gluten-free, vegan soups every day, and post them on our facebook page. Our most popular soups are Very Vegetable Tomato Soup, and Garlic Smashed Potato Soup. Our soups are also usually soy-free as well.

Salads: We have a variety of organic greens, vegetables and fruits for salads, often featuring local produce found at one of our many farmer’s markets. We make our own homemade vegan herb vinaigrette  and Southwest Thousand Island dressings. We also have Just Mayo (vegan, gluten-free), and gluten-free mustard.

Our sandwiches can be made gluten-free quite easily, by substituting our gluten-free house-made sandwich bread, or by making it as a salad. We offer our own house-made chicken-apple salad, made with Hellman’s mayonnaise.  We carry Boars Head sliced meats and cheeses.

Production: We have two separate cooking and prepping areas in our kitchen, and reserve one exclusively for gluten-free baking. We also prepare our daily soups and rice dishes in this area. We currently wash dishes in the same area, but work to wash all gluten-free prep tools first, before washing others.

All employees wear gloves when preparing gluten-free baked goods and soups/rice dishes. At the front counter employees always change gloves before preparing gluten-free sandwiches and salads. Additionally, we use separate utensils for cutting sandwiches, etc.

Please let a manager know immediately if you see that any of these procedures are not being followed. We have over 5-years experience and a very good reputation with gluten-free customers, and we will strive to correct any mistakes made by our staff.

Pembroke Bakery and Cafe is also a retail supplier of Seed Savers Exchange Heirloom vegetable and herb seeds.
